Resolutions

Hope everyone had a Merry Christmas! It was a busy holiday but we're finally back home. Olivia walked into her room to find a big red wagon. She jumped right in for a ride! It sure does your heart good to find the perfect present for someone.

Now on to New Year's and resolutions. I've read recently that you shouldn't go overboard on the number of resolutions and it's important to have accountability. I think I can see the accountability works because my brother succeeded in his resolutions with a subtle reminder every once in a while, lol! So in the next couple of days, I need to finalize a do-able 2010 list and publish it here for the nagging to commence. Stay tuned. . .

More Leftovers Please!

Last week, we made a beef roast with potatoes and carrots for dinner with plenty left over. I went to my go-to site, http://www.allrecipes.com/ for leftover ideas and found a great one! These roast beef burritos were fantastic even with my substitutions. I used a can of tomato sauce for the taco sauce and a can of diced tomatoes for the fresh tomatoes. I still had roast leftover so I made soup on the weekend.

This recipe definitely went into the blue folder. One of these days, I will get that organized. . .

Last week was experiments in the kitchen week!

So last week I tried two new recipes that I've been dying to try, mashed cauliflower and lo mein. I've read how mashed cauliflower was a healthy substitute for mashed potatoes so I whipped up a batch. Here's the recipe I used. It was ok but I found a similar one on the same site with parmeson and a little cream cheese. I think it needed a little more flavor.

I have perfected my fried rice so I thought I was ready to branch out to my next fave Chinese dish. I tried the lo mein with some substitutions. I didn't have any 5 spice powder so I chopped up some ginger and garlic and used that instead. I also used mushrooms instead of green peas. It was good but yet again kinda bland. I went a shelled out the bucks for the spices so we're trying that next time. This recipe makes a lot so JB, O and I had plenty of leftovers. I am sure it would be fine halved.

This weekend I will try my hand at decorating a bday cake. . .

How many days?

Well, O has finally done it. We've all been sitting on the edge of our seats wondering if today was going to be the day and it happened on Friday, 2 weeks before her first bday! She took her first step! See what happens when she stays home for a full day with mommy! And yesterday she took several in a row but we're still a little wobbly. How many days do you think it will take before she starts running?
